Kasaoka ramen is a local ramen from Kasaoka City.

According to Hirofumi Takahashi from the Kasaoka Chamber of Commerce, the characteristics of Kasaoka ramen are as follows:

  • Uses chicken for the soup stock
  • Features Kashiwa (spent hen) boiled chicken as a topping
  • Toppings tend to be simple, including boiled chicken, green onions, and menma
  • The soup flavor tends to be soy sauce-based

The origin of Kasaoka ramen is unclear due to the lack of historical documents.

According to Takahashi, there are local residents who say it has existed since before the war.

The area around Kasaoka City has been a region where poultry farming has been thriving for a long time.

Additionally, the noodle-making industry has also been active, making noodles readily available, which is said to have led to the spontaneous creation of ramen using Kashiwa meat.

Around the year 2000, Kasaoka City began to attract attention among ramen enthusiasts for its unique ramen culture.

Eventually, it came to be called "Kasaoka ramen".

In 2003, the youth division of the Kasaoka Chamber of Commerce began activities to promote Kasaoka using Kasaoka ramen.

Subsequently, the "Ramen Town Kasaoka National Expansion Project Promotion Committee" was established and continues its activities.

The transparent brown soup has a beautiful impression with fat floating on the surface.

When tasted, the flavor of soy sauce and a sweet-spicy taste spreads.

And the umami of chicken gradually comes through.

It tastes just like eating Kasaoka ramen from a restaurant, with a very delicious soup.

The green onion topping is cut diagonally.

The diagonally cut green onions are seen in Kasaoka ramen shops referred to as "Sakamoto style," such as Sakamoto.

While Kasaoka ramen is often associated with boiled chicken from Kashiwa, it was not included in the cup noodles.

Instead, chicken soboro is included.

This is the first time I have eaten Kasaoka ramen with chicken soboro, and it was quite delicious.

Additionally, the noodles are made with curly noodles.

The soup clings well to the noodles, and I thought the pairing of the noodles and soup was perfect.
