The venison carpaccio with beet ravigote sauce features venison sourced from Mimasaka City, Okayama Prefecture, with a red ravigote sauce, and a yogurt sauce under the young corn, providing a subtly tangy flavor that whets the appetite.

The white fish wrapped in potato with burnt butter has a crispy exterior made from finely chopped potatoes, with a creamy white fish filling inside.

The burnt butter sauce has wasabi as an accent, showcasing attention to detail.

The mussel and chorizo soup is a tomato cream soup based on mussels.

Inside, there are tteokbokki and chorizo as accents, providing a perfect balance of mild spiciness and the gentle texture of the tteokbokki.

Additionally, it was delicious when paired with the eight types of grain bread and homemade milk bread.

The duxelles of mushrooms and sweetfish with banana coulis and spice extract features three types of sauces, with chopped mushrooms and shiitake mixed into cream placed under the sweetfish.

The sweetfish, which can be eaten with the skin, pairs excellently with each sauce.

It was so delicious that I found myself pondering which sauce to use.

The main dish, roasted duck breast with Rouennaise sauce, features roasted duck topped with Rouennaise sauce (a sauce made by reducing red wine mixed with bird liver).

The meat is tender, and the combination of the sharp black pepper and sauce creates an exquisite flavor.

For dessert, we had nuts and cassis mousse with carrot and apple combination.

The orange sherbet made from carrot and apple, along with the burdock and walnut ice cream underneath, both had a refreshing taste.

You can choose coffee or tea after the meal.

The timing of the dishes being served is perfect, with just the right amount of waiting time between courses, creating a pleasant feeling of gradually filling your stomach.

Each dish had a taste I had never experienced before, but there was a delightful surprise that made me think, "This combination is possible…!"
