Interview with Dimple's owner, Miyauchi Hirotaka
I spoke with the owner of Bar Dimple, Miyauchi Hirotaka, about the background of the establishment, the secret behind the shop name, the shop's features and commitments, and the future of the business.
The shop name comes from his own "dimples" and the famous whiskey brand "Dimple"
What is the origin of the shop name?
Miyauchi
The shop name "Dimple" means "dimples" in English.
I have dimples when I smile, and it seems that people around me have thought of it as my trademark for a long time.
Additionally, there is a famous Irish whiskey brand called "Dimple."
So, I decided to name the bar "Dimple," combining the whiskey brand with my own characteristic of having dimples.
I also hope that customers will come to our bar and leave with smiles that create dimples.
Before starting Dimple, I worked for about six years at a bar called Danadua in Kurashiki.
I have always been interested in bars and had a desire to open my own bar in the future.
After obtaining my sommelier certification, I thought it was time to go independent.
Thus, I established Bar Dimple.
Dimple opened in May 2013.
Initially focused on wine, but shifted to whiskey and cocktails
Was there anything difficult after opening?

The difficult part was changing the direction midway.
Since I obtained my sommelier certification, I initially focused on wine as the main attraction.
However, many other establishments started promoting wine as well...
To differentiate ourselves from other bars and showcase the uniqueness of Dimple, I decided to change our focus.
We shifted from wine as the main attraction to focusing on whiskey and cocktails.
I aimed to create a space where customers can enjoy whiskey and cocktails while spending a relaxing time.
I wanted to create a space that adults can enjoy, where they can come after visiting other bars.
Another challenge was attracting customers.
Since we are located in a somewhat obscure area, it was tough at first (laughs).

What are the features and commitments of Dimple?

As mentioned earlier, the focus on creating a space where customers can spend a relaxing time is a key feature of Dimple.
For example, many customers come in pairs to the counter seats, so I ensure that the lighting shines between the two when they sit down.
Additionally, I have installed glass-sized lighting in the work area of the counter.
Since customers are coming to the bar, I want them to enjoy watching the preparation of their drinks.
Our bar has a slightly dim atmosphere, so I made sure to illuminate only the glasses.
In this way, I create a unique and special atmosphere that only Dimple can offer.
Also, I have made the space between seats wider.
Even when the bar is full, it doesn't feel cramped, allowing customers to relax.
In the future, I want to train successors and try new fields
How do you want to develop the shop in the future?

I want to train successor staff.
I also have a desire to try different types of restaurants outside of bars.
Before starting Dimple, I also did some cooking.
Currently, the equipment limits the types of dishes I can prepare.
So, I would like to try running a restaurant where I can cook a variety of dishes.
I am still thinking about what kind of restaurant I want to open (laughs).
