We asked about the background and commitment behind the creation of kakigori.
Pursuing unique kakigori at Patisserie Le Vert
Is this your first year (2025) making kakigori?
Kataoka
Yes, this is the first year (2025).
It was suggested by my wife that "when it's hot, you want ice." I thought if I was going to do it, I should make it representative of my shop.
As per the shop's concept of "local production for local consumption, healthy," I thought of making kakigori that a cake shop would create. The tomatoes and plums are from Kamogata, and the white peaches are from Tamashima. I also plan to have a grape flavor in the future.

I think tomato kakigori is rare; why did you decide to create this flavor?
Kataoka
When making cakes, I have the concept of "incorporating vegetables and Japanese ingredients."
I make a tomato jam that even children who dislike tomatoes can eat, and I use it in cakes. It turns out similar to strawberry jam. Since I have a base from cake making, I thought I could also make it for kakigori.
Dogs can cool off together

Dogs can also eat kakigori together, right? Why did you allow dogs?
Kataoka
In regular markets, it's not allowed to enter the building, but for kakigori, we allow them inside. I used to have a dog and thought there weren't many places where dogs are allowed indoors.
Since it's so hot, I wanted people to spend time with their dogs in a cool place. The dog ice is just plain ice, but they seem to enjoy eating it.
I hope it spreads through dog connections.

You have some rare flavors like tomato, right?
Kataoka
We have kakigori for the Sakamoto Egg Marche called "HOSHINOSATO EGG MARCHE," which uses eggs from Sakamoto Egg Farm.
It's made in the same process as custard cream, stopping the heat just before it sets. I make sure not to let it set too much so that it can coat the ice.
What was the trigger for this menu's creation?
Kataoka
When I participate in HOSHINOSATO EGG MARCHE, I think about how I can collaborate using Sakamoto Egg Farm's eggs.
The idea for kakigori came from Sakamoto Egg Farm suggesting, "Can you make something like a milkshake?" So I thought, since it's summer, maybe I should make kakigori.
Although it's kakigori, it contains eggs, milk, and sugar, so it's similar to a milkshake. You don't have to rush to eat it, and when it melts, you can drink it like a milkshake.
