Interview with Chief Manager Azusa Takeno
The white-walled building that embodies the essence of Kurashiki, Takenoya Bettei, is 150 years old.
We interviewed Chief Manager Azusa Takeno.

The Birth and Commitment of Takenoya Bettei
Please tell us about the background of the birth of Takenoya Bettei.
Takeno (honorific omitted)
Takenoya Bettei was born from the desire to spend special moments with loved ones while enjoying the changing garden through the seasons.
To provide visually enjoyable and delicious dishes, our artisans carefully decorate the plates.
We use carefully selected tableware from across the country, and we hope you enjoy the tableware as well.
Just as the garden's scenery changes with the seasons, we use seasonal ingredients in our meals, hoping you can enjoy dining as if taking a walk on the plate.
At Bettei, we also offer seasonal afternoon tea throughout the year.
Please enjoy our afternoon tea, which is a collaboration between Japanese cuisine artisans and patissiers, committed to being "delicious until the last bite."

This location is also close to the Bikan Historical Area, making it a place for both locals and tourists to visit.
From here, we want to convey the goodness of Kurashiki and Okayama.

Striving for Heartfelt Cuisine and Service
The building is impressive, not just the cuisine and tableware.
Takeno
The building has a history of 150 years.
Being close to the Bikan Historical Area and having this building raises expectations.
To match the quality of the location and building, we strive to meet customer expectations with our cuisine and service.

I hope customers come to relax and enjoy their meals while gazing at the garden that changes with the seasons.

Just as the garden changes, the meals also change with the seasons.
We want customers to feel like they want to return, not just once.
To achieve that, we have created a menu that changes and allows customers to enjoy the seasons.

Could you also tell us about the Mont Blanc parfait?
Takeno
Everything in the parfait is handmade.
Each bite surprises you like a treasure chest, making you excited.
"What could this be? I wonder how it would taste with the layer below?"
We made it a playful parfait that makes you think like that.

We are creating parfaits filled with the maker's thoughts.
If the person making it enjoys it, the feelings will be conveyed to the person eating it.
Do you have any goals you are aiming for?
Takeno
It's not just about serving the food and ending it; we want customers to eat after understanding the dishes and ingredients.
It becomes more delicious when you know what you're eating.
Since we know it's delicious, we can share that feeling with "Yes, that's right."
Moreover, because we put our thoughts into making it, we want to explain each dish carefully.

It makes me happy to make customers happy, and it motivates me.
Every time I bring something, I hear "Wow!"
That truly makes me happy.
I hope to provide memorable dishes and moments.
I hope that even if customers can't remember the name of the restaurant, they will remember, "That dish I had back then was great."

We will also focus on garden afternoon tea.
We will provide afternoon tea that allows you to feel the seasons throughout the year, and we hope many people will enjoy it.
Conclusion

After interviewing Chief Manager Takeno, I felt a commitment not only to the cuisine but also to the service, tableware, and garden creation.
It's wonderful to feel the seasons through both sight and taste in a building that feels extraordinary.
With different pleasures in each season, you will want to visit many times.
How about enjoying a meal in a restaurant that allows you to feel the seasons?
