Wagyu Proposta - A Hearty Morning in Kurashiki with Fragrant Genmaicha Tea Over Rice

In October 2025, the renewed Waryu Proposta opened at LOGIN Kurashiki in 2-chome, Achi, Kurashiki City, and is a shop focused on sweets and Japanese tea centered around "Wa" (Japanese style).

I heard it was a rare shop serving genmaicha (brown rice tea) brewed with a siphon, and I was very interested. I also learned that a new item, ochazuke (rice with tea), has recently been added to the regular menu, so I went to check it out.

I interviewed Waryu Proposta, which has already become popular with its ochazuke, to find out why they decided to brew tea using the labor-intensive siphon method.

Don't underestimate "Ochazuke from a Tea Shop"

I was surprised by the large silver salmon on the salmon ochazuke, which overflowed from the rice bowl.

The salmon ochazuke I ordered came with a generous serving of genmaicha brewed with a siphon for 1,200 yen (tax included).

Waryu Proposta offers five types of ochazuke. The ingredients include freshly grilled silver salmon, cod roe, and miso-marinated Spanish mackerel.

The miso used for the grilled rice balls is red miso made in-house, and the original miso made in-house is also used for the Saikyo miso.

The ochazuke is prepared with the ingredients after the order is received, and during that time, genmaicha is brewed one serving at a time using the siphon.

After adding the genmai, they watch for the moment when the genmai starts dancing in the hot water in the upper bowl before adding the tea leaves.

The freshly grilled silver salmon on the ochazuke and the original genmaicha brewed with a siphon both emit a fragrant aroma that whets the appetite.

What is common to all the ochazuke is that the freshly brewed siphon genmaicha is served in a generous amount, more than enough for the ochazuke.

The ochazuke's flavor is determined by the subtle saltiness of the ingredients and the in-house made miso, but above all, the original genmaicha brings out the deliciousness of each dish.

Since the siphon can heat water up to 90 degrees, it must use genmai and tea leaves that are delicious even when brewed with hot water.

They experimented with various types of rice in the roaster until they found the fragrant popping genmai.

However, most of them only turned a dark brown color without popping, and they finally arrived at "Nikomaru" rice from Okayama Prefecture.

The roasting temperature is about 400 degrees, and they roast for 10 to 15 minutes depending on the day's temperature and humidity.

The "Nikomaru" rice, which has larger grains compared to other genmai, releases a fragrant aroma when roasted, popping white and creating the unique flavor of genmaicha.

For the genmaicha, they mix deeply roasted and lightly roasted genmai.

After much trial and error in search of tea leaves that can withstand high temperatures without losing their aroma and flavor, they decided to blend two types: Karigane and Jo Aoyanagi.

After numerous trials to arrive at the combination of "Nikomaru Genmaicha" + "Karigane" + "Kamiaoyagi," we have reached the current ratio that produces a fragrant, rich, and mellow aroma and taste.

Recommended Menu After Meals

Waryu Proposta offers classic menu items made with house-made red bean paste and seasonal Japanese-style sweets.

When I asked the representative, Haruyama Masataka, "What sweets are popular after meals?" he replied, "Canele made with rice flour."

The canele, which has a moderate sweetness and is enjoyed with the leftover genmaicha, may pair well with the saltiness of the ochazuke (rice with tea).
