On September 24, 2019, another store reopened in Mabi.
The okonomiyaki and teppanyaki restaurant "Nyudogumo".
Previously, it was located in a tenant space at Mabi Memorial Hospital.
Encouraged by regular customers asking, "When will you reopen?" and "We're waiting for you," Nyudogumo decided to restart in Mabi.
Their specialty is okonomiyaki with a crispy surface and fluffy inside, along with yakisoba that is stir-fried after boiling the noodles.
Local customers are delighted that they can enjoy Nyudogumo's okonomiyaki again.
Introducing Nyudogumo, which has transformed into a stylish okonomiyaki restaurant that is easy for families to enter.
Relocation and reopening in September 2019! Okonomiyaki "Nyudogumo"

The green sign is new, located in "Arai" in Mabi.
Previously, it was in a tenant space within Mabi Memorial Hospital, but it has relocated to a nearby plot of land.

To the left is the yakitori restaurant "Nanako," and to the right is "CAFE BRIDGE".
Both are new establishments that opened after the heavy rain disaster in July 2018.

On the same premises, there is "Sanuki Udon Kawahara" and Chinese restaurant "Shinshiki," making it a concentrated area of dining establishments in Mabi.
There is also plenty of shared parking available.
Stylish interior with pop music during the day and jazz at night

Walking in, you will be surprised! The interior is stylish, like a cafe.
The BGM is also a point of pride for the owner, with pop music playing during the day and jazz, which they have recently started to enjoy, playing at night.

The previous location had tatami seating, but the new store has all table seating.
The table seating is reportedly popular among the elderly.

There are seven counter seats surrounding the teppan.
The restaurant has switched from gas to electric for the teppan, making it easier to work without trapping heat.
Previously, they would be sweating profusely while cooking okonomiyaki even in winter.

The interior reflects the owner's taste, decided in conversation with the construction company.
It is green and open, making it easy for families to enter.

"Hand in hand towards the future."
The banner that has encouraged many people in Mabi is the first thing that catches your eye when you enter the restaurant.
Nyudogumo's menu: A wide variety of alcoholic beverages

Introducing Nyudogumo's menu.
At night, they also offer a variety of appetizers that go well with alcohol.
The okonomiyaki, such as buta-tama (pork) and suji-kon-tama (beef tendon), are popular standard items.
Yakisoba made with fresh noodles is also recommended.

There is also a wide variety of alcoholic beverages. Cocktails seem to be enjoyable as well.

The bottles of alcohol have been lined up for display.
Among them, the highlight is the sake "Fukko" made with Asahi rice.
Fukko is a junmai sake made by a sake brewery in Kurashiki City using Asahi rice, created with the hope of the recovery of Mabi.
"Static" okonomiyaki and "dynamic" yakisoba!? I want to eat both!

I was specially allowed to observe the teppan.
With skilled hands, they form the okonomiyaki batter.

In just a few seconds, they skillfully form a beautiful circle. This is something difficult for amateurs!
The ingredients, such as cabbage, are sourced based on their current quality.

Place the pork belly on one side of the batter.
It is said that "the fattier the better, as it won't shrink when cooked."

Flip it over and wait patiently for the pork fat to seep out.
The batter has become fluffy, but what is the secret to this fluffiness?
"I think cooking it on a teppan is the best. Even if you use the same ingredients at home, you can't achieve this fluffiness."

The surface of the pork belly is perfectly grilled and looks delicious!
It seems that the key is to wait patiently while grilling the pork without too much interference.

In contrast to the patiently waiting okonomiyaki, the yakisoba is constantly moving!
Cumulonimbus yakisoba uses fresh noodles sourced from a local noodle shop in Kurashiki.
Since the noodles are boiled each time, you need to time it right to stir-fry the vegetables and ingredients.

After boiling the noodles, mix them with the ingredients and sauce. It's so quick that the camera can't keep up!

The heat, the steam, and the savory aroma of the sauce fill the air.

In no time, the seafood yakisoba is ready.
It all happened in just a few minutes from boiling the noodles.
It's truly the "still" okonomiyaki and the "moving" yakisoba.
The sounds, the smells, and the excitement while waiting are unique pleasures of teppanyaki.
Crispy and Fluffy! I Want to Devour the Hot Okonomiyaki

The "Butatama" okonomiyaki and "Seafood Yakisoba" are ready.
For someone who loves flour-based dishes, this is an irresistible sight full of happiness.
"I want to eat a lot of flour dishes!" That dream is now coming true.

First, I will start with the "Butatama" for 630 yen (including tax).
The sauce is generously topped with Tate Sauce from Tamashima, Kurashiki City.
Tate Sauce is the best for okonomiyaki!
On the hot teppan, the freshly cooked deliciousness is preserved.
The aonori (dried green seaweed), bonito flakes, and mayonnaise are irresistible.

A fluffy okonomiyaki with height.
It's a fluffiness that is hard to achieve at home.

As I take a bite of the hot okonomiyaki, I experience the umami of the pork, the crispy texture, and the indescribably fluffy texture of the batter!
With the sweetness of the cabbage, even though it's hot, I want to keep eating it.
The combination with the slightly sweet Tate Sauce is perfect; I could eat this okonomiyaki endlessly.
The Noodles Are Chewy and the Sauce Coats Them! The Seafood Yakisoba is Delicious

What I want to eat with okonomiyaki is yakisoba!
I will have the "Seafood Yakisoba" for 750 yen (including tax).
The toppings of pickled ginger and green onions are great.

The seafood yakisoba is filled with luxurious ingredients like shrimp, squid, and octopus.
The noodles soaked up the ocean's umami and are delicious!
With a chewy texture, it tastes completely different from the typical Chinese-style yakisoba noodles.
The Tate Sauce also coats the noodles well, giving it a different aspect compared to okonomiyaki.
Cumulonimbus, which relocated and reopened in September 2019.
I interviewed the manager, Iwama Katsunori, about the decision to reopen after the July 2018 heavy rain disaster and what lies ahead.
